The History of the Chocolate Chip Cookie

We don’t have to go too far back to picture a world without chocolate chip cookies. In fact, the origins of the humble chocolate chip cookie take us to the 1930s, when Toll House Restaurant owner Ruth Wakefield popularized this cookie flavor.

There are a few versions of this story that claim the chocolate chip cookie came to be due to a happy accident, but we have to give Ms. Wakefield more credit than that. Ruth was apparently an established and talented chef and recipe developer, so she probably spent a good amount of time developing her recipe for chocolate chip cookies.

Just think about it: Every element of a chocolate chip cookie is absolutely necessary to create those well-rounded flavors we’ve come to adore.

We sure are thankful to Ruth for gracing the world with the most popular type of cookie! Ever since the creation of the chocolate chip cookie, we haven’t been able to get enough.

But are there sugar-free chocolate chips? What if we want to lower our daily net carbs? What’s a choc chip lover to do?!

What Makes Chocolate Chip Cookies Keto?

Delicious Keto Chocolate Chip Cookies Recipe

Traditional chocolate chip cookies usually aren’t keto due to their carbohydrate and sugar content. After all, for the body to maintain ketosis, we can’t get too many of our daily calories from carbs.

The most common macronutrient split for ketogenic diets is about five to 10% of our daily coming from carbohydrates. As for our other necessary macronutrients, you will want to maintain about 70 to 80% of calories from fat and 10 to 20% from protein. Your keto macro requirements may look a little different, but this is a fairly standard plan for our keto pals.

Traditional chocolate chip cookies are usually made with wheat flour, which has a high carb content. We are talking almost 93 grams of carbohydrates per one cup of all-purpose wheat flour … Yikes!

Couple that with white sugar, brown sugar, and non-keto chocolate chips, and you likely won’t find just any ol’ chocolate chip cookies to fit within your keto macro needs (and satisfy your sweet tooth).

Keto chocolate chip cookies will be made from low-carb flour, keto-friendly sugar substitutes, and keto chocolate chips. Ready to learn more about the ingredients that make up the best keto cookies you’ve ever tasted? Class is now in session.

The Best Low Carb Keto Flours for Chocolate Chip Cookies

Flour is the backbone of any good dessert recipe, and chocolate chip cookies are no exception. Traditional all-purpose flour is normally considered a no-go for those on a keto diet. Thankfully, there are still a ton of flour options for keto-friendly chocolate chip cookies that are just as delicious!

  • Almond Flour. Almond flour is one of the most flavorful and easiest keto flour for baking. The taste of almond flour has been described as slightly sugared and rich — with a low carb count to boot. Almond flour is super simple to swap to make your recipes keto-friendly, and you can replace all-purpose flour with almond flour in a 1:1 ratio.
  • Coconut Flour. We love the low-carb powerhouse that is coconut flour. Coconut flour is extremely absorbent, so replacing all-purpose flour in a recipe can take a little bit of experimentation if you’re using an existing recipe. Coconut flour has a subtle coconut flavor, giving keto chocolate chip cookies a yummy twist!
  • Psyllium Husk. Psyllium husk helps give keto baked goods a chewy texture. Crumbly, fall-apart cookies just aren’t the business! Psyllium husk is considered a prebiotic, and prebiotics can help our bodies maintain a healthy gut microbiome. Adding a small amount of psyllium husk powder can give that delightful chew we know and love.

Keto-Friendly Chocolate Chips

Delicious Keto Chocolate Chip Cookies Recipe

Keto chocolate chips should be low in carbs and sugar but high in yumminess and satisfaction! Our keto chocolate chips are a necessary part of this delicious keto chocolate chip cookies recipe.

No bitterness here with our perfectly balanced keto and vegan dark chocolate chips. They only have 1 gram of sugar and 1 gram of carbs per serving. Amazed yet? Just wait until you try these delectable little morsels for yourself.

Our keto-friendly dark chocolate chips are totally versatile and will feel right at home in an appetizing chocolate chip cookie. We use a unique blend of sweeteners that we’ve developed to make our chocolate goodies taste just as good as the real thing — if not better.

Keto-Friendly Sweeteners

There are many sweeteners that are keto-approved out on the market these days, like allulose or monk fruit sweetener — but not all of them are MiiRO-approved!

Certain sugar substitutes, such as xylitol, have been associated with digestive issues that are the last thing you want to deal with when munching on a chocolate chip cookie! In our unique sweetener blend, we gently ferment our erythritol. This makes it easier to digest, which is helpful for even the most sensitive of tummies.

Here at MiiRO, we are particular about the sugar replacements we use and where they are sourced. Our stevia comes straight from the farm, so you can be sure of its quality, whether it’s in chewy keto chocolate chip cookies or a keto chocolate bar.

We also love incorporating chicory root fiber in our products. Chicory root fiber provides us with — you guessed it — fiber! This lovely plant comes from the same family as dandelions and won’t spike your blood sugar when used as a sweetener in our keto chocolate chips.

The BEST Keto Chocolate Chip Cookies Recipe

You have your mixing bowl, cookie sheet, cookie scoop, measuring utensils, and hungry tummy all ready to bake delicious keto chocolate chip cookies. Now, all you need is the recipe!

This recipe makes 12 delicious keto chocolate chip cookies (so don’t be afraid to double it for the whole family to enjoy).

You’ll need:

  • 2 cups Almond Flour
  • 2 tbsp Coconut Flour
  • ¼ tsp Xanthan Gum
  • ½ tsp Baking Powder
  • ¼ tsp Salt
  • ½ cup Coconut Oil or Non-Dairy Unsalted or Salted Butter, Melted
  • ½ cup keto No Added Sugar Maple Flavored Syrup
  • 2 “Flax Eggs” (1 tbsp Flaxseed Meal combined with 3 tbsp of Water, set for 5 minutes)
  • 1 tsp Keto-Friendly Vanilla Extract
  • ½ cup (or more, we won’t judge!) keto-friendly Dark Chocolate Baking Chips

Together, these make gluten-free chocolate chip cookies with low total carbs — and high deliciousness.

Instructions

1. First, preheat your oven to 350° Fahrenheit and cover a cookie tray with parchment paper or a silicone mat. Combine two tablespoons of flaxseed meal with six tablespoons of water in a small bowl and set aside.
    2. In a large bowl, sift your almond flour, coconut flour, xanthan gum, baking powder, and salt together until the consistency is uniform.

Make a well in the center of your dry ingredients and add your wet ingredients to the mix — we’re talking melted coconut oil or unsalted butter, No Added Sugar Maple Syrup, large eggs, and vanilla extract. Then add the flax eggs that we set aside earlier! Stir your ingredients until just combined.

      3. Add your ½ cup of keto chocolate chips, with a few extra handfuls for good measure. Mix everything until it forms a cookie dough, making sure everything is well incorporated.

Roll your keto chocolate chip cookie dough into balls measuring about two tablespoons in diameter (although we will cheer you on if you want fewer, bigger cookies). Place your cookie dough balls on your lined cookie sheet, approximately two inches apart.

      4. Flatten the cookie dough balls slightly, but not so much that cracks form! We need to flatten these cookies because they won’t expand much in the oven. Bake in the oven for 12 to 15 minutes, depending on how chewy you like your cookies.

Out of the Oven (And Into Your Tummy)

Once your keto chocolate chip cookies are done in the oven, let them cool on your baking sheet for about twenty minutes. We know gazing at fresh-out-of-the-oven cookies is tempting, but trust us; it’s worth letting them cool for a bit so they get delightfully crispy.

Cooling your cookies to room temperature also helps the integrity of the cookie stay intact and makes them easy to eat! Enjoy these melty, buttery keto chocolate chip cookies with a glass of non-dairy milk. Our tummies are grumbling just thinking about these beauties.

If you’ve got some low carb chocolate chip cookies left over at the end of the night, just store them in an airtight container until you’re ready for another delicious snack.
